Sweet corn (Zea mays) is a classic, rewarding warm-season crop. Growing corn is a unique experience because it relies on the wind, rather than bees, for pollination. With the right layout and plenty of sunshine, you can harvest exceptionally sweet, crisp ears right from your garden.

The Corn Seed

Corn seeds are simply dried, shriveled corn kernels. Because they have a tough outer coat and require warm soil to germinate, planting them too early in cold, wet ground can cause them to rot. Like green beans, corn has a sensitive root system and performs best when sown directly into its final growing location.

Quick Care Guide

Soil & Location: Corn requires full sun (at least 6 to 8 hours of direct sunlight) and a spot sheltered from harsh winds. It thrives in rich, deeply worked, well-draining soil packed with organic matter.

The Block Planting Secret (Crucial): Never plant corn in a single long row. Because corn is wind-pollinated, seeds must be planted in a grid or block formation (at least 3 to 4 short parallel rows). This ensures pollen from the tassels at the top falls successfully onto the silks below. Poor pollination leads to cobs with missing kernels.

Sowing & Spacing: Plant seeds about 1 to 1.5 inches deep and 4 to 6 inches apart. Once the seedlings emerge and reach a few inches tall, thin them out to stand 10 to 12 inches apart. Space the rows about 30 to 36 inches from each other.

Watering: Corn is a thirsty plant. It needs consistent, deep watering—about 1 to 2 inches per week—especially when the stalks are growing rapidly and when the silks emerge. Avoid letting the soil dry out, which causes tough, poorly filled kernels.

Fertilization: Corn is a heavy feeder, particularly demanding nitrogen. Mix plenty of compost or aged manure into the soil before planting. Side-dress the stalks with a nitrogen-rich organic fertilizer once when they are knee-high, and again when the tassels (the flowers at the top) appear.

Harvest Tip: Corn is ready to harvest when the silks at the top of the ear turn dark brown and dry. To be sure, gently peel back a bit of the husk and pierce a kernel with your fingernail; if a milky liquid squirts out, it’s at peak sweetness and ready to pick!
